Is it okay to prepare a big turkey breast today with a dry rub, wrap it up, put it in the refrig (no marinade), for roasting on Wd. afternoon?

Should be fine depending on when you purchased it. For crispy skin, refrigerate uncovered (remove plastic wrap) the night before you roast it.

Thanks, Dottie...I purchased it at 3 pm today, seasoned it, and put it on a platter and wrapped loosely with tin foil. Should I have used plastic wrap instead? (I'm cooking the Passover feast!), and need to do some stuff ahead of time...(I'm cooking it about 2 pm or so on Wed.)
