Posted: 4/6/09 at 7:46pmIs it okay to prepare a big turkey breast today with a dry rub, wrap it up, put it in the refrig (no marinade), for roasting on Wd. afternoon?

Posted: 4/6/09 at 8:09pmShould be fine depending on when you purchased it. For crispy skin, refrigerate uncovered (remove plastic wrap) the night before you roast it.

Posted: 4/6/09 at 8:14pmThanks, Dottie...I purchased it at 3 pm today, seasoned it, and put it on a platter and wrapped loosely with tin foil. Should I have used plastic wrap instead? (I'm cooking the Passover feast!), and need to do some stuff ahead of time...(I'm cooking it about 2 pm or so on Wed.)
