LEMONY SNICKET'S A SERIES OF UNFORTUNATE EVENTS is one that comes to mind. The film itself is decent but overall forgettable. However, it is helped immensely by the incredible score by Thomas Newman. One of the best fantasy scores I've heard in quite a while.
Thomas Newman is incomparable. His scores are always stunning.
Star Trek V: The Final Frontier is 90% unwatchable, but the Jerry Goldsmith score is one of his most listenable.
Memoris of a Geisha
The Da Vinci Code
I do like those movies, though. Just not as much as their scores.

So many...my current favorite is "One Night with the King"...the score is by J.A.C. Redford (who is overdue for an Oscar nomination -- someone give this guy a chance).
KING ARTHUR
Holy cow! It's one of my absolute favorite film scores, the movie with Clive Owen and Keira Knightley was something else though...)
Also:
DaVinci Code
Snow Falling on Cedars
I think A Little Night Music is worth mentioning, even if the score was written before the movie.

THE WITCHES OF EASTWICK, a pretty silly movie with a terrific score.
MARS ATTACKS! not Tim Burton's best, but a wonderful score by Danny Elfman.
THE GOOD GERMAN
LADY IN THE WATER
THE VILLAGE

Munk, yes, the good german has a BEAUTIFUL score.
The Road to Wellville - so-so movie, great score by Rachel Portman
The Perfect Storm
James Horner's most emotional and vivid of the last 15 years, and oddly enough, captures the spirit of the book without being weighed down by the movie star-laden film adpataion.
Xanadu
Flashdance
Thank God It's Friday
Car Wash
All the Star Wars films.
Munk took mine but The Village which is hated by most people (although I liked it) has an INCREDIBLE score that is quite moving and some extraordinary vilon work by this young play (of course I forget her name...hilary something?) and Lady in the Water as well. James Newton Howard is amazing!
I love both The Village and Lady in the Water, as films.
The Village was just terrible and Lady In the Water was improbably worse. I didn't hate the scores though.
I would have said The Perfect Storm as well.
John William's stirring score for The Patriot is one of my personal favorites of his.
I actually love LADY IN THE WATER as a film...but I think that THE VILLAGE is just awful.
