Posted: 3/17/05 at 6:58pmI had a romaine salad with a homemade vinegarette and breadsticks topped with butter and spices and baked in the oven with Fetuccini Alfredo. What did everyone else have?

my FAVORITE chicken
3 or four breasts
1 regular jar of apricot preserves
1 regular bottle of russian dressing (not 1000 island)
1 packet of liptons
mix preserves, dressing, and soup together. pour a little on bottom of casserole. Place chicken in cassarole. pour rest on chicken, covering......stab chicken over and over and over to allow some of the mixture in the chicken.
Cover and cook for 50 minutes
You can marinade for a couples hours before if you want.
Serve over wild rice

Ramen noodles all the way.
Empty packet in boiling water
cook till soft
stir in soup mix.
Easiest thing in the world and oh so tasty.

- "Greek" Pizza (with spinach and feta)
- pasta with roasted red peppers and mushrooms in marinara sauce with vinegar
- boston cream pie
- some type of mousse concoction
I love my dining hall and meal plan.

joeyjoe bought a slow cooker a few weeks ago and we made chicken chile with it yesterday and it was heavenly. SO easy and so delicious...
Take two pounds of chicken and put it in the slow cooker.
In a Bowl, mix together one 16 ounce jar of your favorite Salsa, one Chicken Bouillon cube and one tablespoon of chili seasoning. Stir that all together until the bouillon is disolved and pour over the chicken in the pot. Put the lid on and cook on Low for 7-8 hours - the chicken falls apart with a fork into lovely shredded bits. I took whole wheat tortillas, brushed them with water and sprinkled crushed red pepper flakes and garlic powder on them and cut them in strips and baked them for about 15 minutes in a 325 degree oven until they were crisp, then crumbled them into a bowl and ladled the chile over them - it was SO good.
