Jam solidifies from the pectin that is in the skin of the fruit which acts as a natural gelatin. Jelly on the other hand, one must add gelatin. Preserves are jams.

I've never quite understood "A stitch in time saves nine."
Perhaps Madeleine L'Engle could clear this up for us? I mean, if you can wrinkle it, surely you can stitch it, right? I'm just not sure what nine _________ we'll be saving...

Pump up the jam: turn up the volume on the music (jam referring to musicians "jamming."
A stitch in time saves nine: If you put one stitch into a tiny tear, it won't grow large enough to need nine.
Now, someone explain "no love lost." That never made sense to me.

"Still waters run deep."
A still body of water (the ocean or a lake on a calm day) is going to be a lot deeper than one with rushing rapids, such as a river or a stream.
