While not the greatest movie, this scene in X-MEN: THE LAST STAND is a great one I think. It takes a lot of work to make Ian McKellan and Patrick Stewart look 20 years younger.

One of my favorites is from "The Red Shoes."
(I guess this could be considered a SPOILER for anyone who hasn't seen the movie.)
The first performance of the title ballet is taking place, and the camera is placed high on stage right, looking towards the conductor and the audience. As we watch Victoria Page dancing, a shot of waves crashing against rocky cliffs is superimposed over the audience, and we hear the waves roaring. Then we cut backstage to a close up of the dancer and realize that what we're hearing is actually applause. It's a wonderful way of taking us inside her mind.

HMM sooo many. One of my favorite's was the Squib hit Jerry Orbach took in the movie F/X. It explicitly showed why people in movies are so often shot in the chest NOT the head. This can be something that used to bother me in films ,when it is obvious a skilled marksman ( ie ETF) could take someone out w a head shot. A squib hit any where on the head is very dangerous and props to Jerry for going for it. It was also integral to the story.
ALL of the sailing sequances in White Squall,even w safety divers that stuff is difficult and dangerous but so beautiful on film.
As a kid, Maleficent's change into the dragon in Sleeping Beauty was a special effect that just grabbed me ( yes I know it was draw, I'd just never seen anything like it before) now it seems pretty bland.
I'll think of some more.
