I use a new towel every time.
sheets - every other week. i actually don't change them.... I take them off my bed, wash them, and put them back on.

Technically, towels never get dirty. Since I'm clean after the shower/bath, I use the same one for about three or four days, until it just gets too wet to use again.
I change the sheets bi-weekly.
