The rain and humidity is good for one thing. The Garden State has had a bumper crop of the sweetest, juciest tomatoes ever. My garden is bursting with flavors. (cukes, zucchini, white eggplant(yum), etc), but a Jersey tomato is one of the best things to put in your mouth.
Here's one of my favorite combos:
fresh picked tomaotes (quartered), freshly crushed garlic, fresh basil, fresh spinach. A few mozzarello balls. Extra virgin olive oil, a few springs of fesh tarragon.
Saute garlic, basil, spinach in olive oil. Fold in tomatoes and mozz. balls, top with tarragon leaves. Serve warm or room temp.
* You can make this a meal by adding fresh scallops, or braised chicken breast strips. Add homemade pasta (angel hair is good).
Now, if they served this at Trump's...I'd invite the octopus to join me.
Headed to the beach this weekend. Searching for the white peaches along the roadside stands!
Happy weekend all!
That sounds delicious !!! Now you got me in the mood for white peaches...guess I'll have to take a drive along RTE 34 this weekend.
I for one would like to see BOOBS' upfront peaches and her sweet tomato from behind.

There is NOTHING like fresh, homegrown tomatoes!

You're right, DG, there IS nothing like home-grown tomatoes. I remember being sent as a kid to my Uncle's greenhouse to pick tomatoes. The smell of that ripening fruit was just delicious. While on holiday a couple of weeks ago, me and my friends had a real craving for tomato sandwiches and so I said I'd make some. The simplest of meals, really, but it was as good as a feast.
