Go to the websites of different theatre merchandisers, if they don't have a section for employment opportunities, you can always contact them with a resume.
There are some pretty decent opportunities for jobs on Playbill.com, too. I got a job at the Roundabout from there (that I kept for all of two days before quitting to wait tables).

show property they do a lot of shows / look in the chicago,gypsy or phantom playbills...the same people do all 3 shows and are always hiring for Chicago.
