Mojito chips...I kid you not

I was zipping down the supermarket aisle this weekend and--I kid you not...I saw a bag of Tortilla chips (I can't recall the brand for the life of me) and the "flavor" label said...
Mojito or Mojitos... I did a double-take and then read it carefully and yep--it said what I thought it said.

Dame...I thought of you. I should have stopped and read the ingredients. Have you heard of these?

Haven't seen Mojito chips, but here's a recipe for mojito chicken:
Mojito-Marinated Chicken Breasts

3/4 cup fresh lime juice
1/2 cup plus 2 tablespoons light rum
1/2 cup finely chopped fresh mint
6 tablespoons mint syrup
1 tablespoon vegetable oil
1 tablespoon coarse kosher salt
6 chicken breast halves with skin and bones (about 5 pounds)
3 limes, quartered lengthwise
Fresh mint

Whisk lime juice, 1/2 cup rum, and next 4 ingredients in bowl. Place chicken in resealable plastic bag. Pour marinade over, seal bag. Turn bag to distribute marinade. chill 4 hours, turning bag twice.
Place lime quarters in shallow bowl. Pour remaining 2 tablespoons rum over, tossing to coat. Let stand at room temperature.

Prepare barbecue ( medium heat). Grill chicken until cooked through, about 15 minutes per side. Transfer to plater.

Grill limes until soft and slightly charred, about 5 minutes. Garnish plater with mint sprigs. Squeeze grilled limes over chicken and serve.

6 servings

Note: Mint syrup is often shelved with the coffee and tea at the
supermarket.

WOW. I must say I have not seen the mojito chips. I will be on the look out. That chciken sounds delicious too. I am wondering; with all that mint and rum; would one be susseptible to heatrburn?

You could take some Pepcid before you eat the mojito chicken accompanied by mojito chips and a mojito cocktail. Wish I could say I like them...I tasted one once and I didn't like it...please don't slap me Dame!

I had a number of well made Mojitos this past weekend, and boy was I ever full of chips and in the bag!
