I just threw together a salad that is really delish.
Lettuce. Ripe strawberries. Seedless red grapes and ginger dressing. It sounds disgusting, but it is the best salad I have ever tasted.
Try it!

Posted: 5/10/06 at 11:45amOne of my favorites is rocket, avocado, and grapefruit sections. Dressing is a little chili oil mixed with the juice from the grapefruit and add a pinch of salt. It's wonderful.

The best salad that I ever had was on a side street in Vienna.
It had potato and cucumber with an amazing dressing.

I'm awfully partial to my Tuscan Bean Salad: white beans, olive oil, tuna and red onions.
I also like roasted beets, smoked trout and creme fraiche.

Romaine
grape tomatoes
feta cheese
dried cranberries (or raisins)
sunflower seeds (or walnuts)
a little chopped red onion
balsamic vinaigrette
Sounds odd. tastes fab.

Sweet Tangy Crunchy Tuna Salad:
2 cups Tuna
1 cup Shredded Carrots
1/2 cup raisins
1/4 cup sliced green onion
mayo
The sweetness of the raisins and carrots play nicely against the grren onion.
It also works with chicken.

I just had a sald of:
mixed greens
2 slices of tomato with basil
a few ounces of grilled salmon
some low-cal balsamic vinagrette.
Yum yum.

Posted: 5/10/06 at 5:52pmA friend of mine makes a salad of baby spinach leaves and fresh strawberries with a sweet and sour poppy seed dressing. It is very good. I updated it a bit and added walnuts and water chestnuts for crunch. Incidentally, there is a wonderful chain of restaurants in California called Fresh Choice. It is basically a huge salad bar with everything ranging from hearts of palm to artichokes to fresh beets. They have a vast array of unusaual lettuces and other greens as well. If you are ever in the Silicon Valley area , try one of them.

Corine, that sounds good.
My mother makes this amazing salad, but I'm not sure of the exact ingredients. It's lettuce and strawberries, mainly; I can't remember what else is in it, but I'll ask her and find out. It's in this really light, slightly citrus-y vinaigrette.

While perhaps more a cole slaw than a salad, I can devour a huge bowl of:
slivered cabbage
watercress
slivered radish
toss in olive oil stirred with some fancy fresh lime or lemon juice as from a Tahitian lime or Hilo, lisbon or Meyer lemon
add seasonal berries, fruit, avocado as available, different every time
toss again gently
