I'm in NY so it's 3 am here. And I have to be up at seven for an audition and yet I'm making no attempt to go to bed. God I'm a glutton for punishment

Here is a delightful recipe for Fried Peanut Butter and Banana Sandwiches, courtesy of Elvis Presley, via Nigella...

Ingredients:
1 small ripe banana
2 slices of white bread
2 scant tablespoons smooth peanut butter(NOT extra-smooth)
2 tablespoons of butter

Method:
Mash or slice banana. Lightly toast the bread, and then spread the peanut butter on one piece and the banana on the other. Sandwich together then fry in the butter, turning once, until each side is golden brown. Remove to a plate, cut the sandwich carefully in half on the diagonal and eat.

Serves 1.
