I'm looking for a wonderful Potato Salad recipe. I can never get the salad dressing/mustard ratio just right and it gets soggy by Day 2.

Beacon - I use baby red potatoes, unpeeled, Sour cream and Mayo with Dill.

I knew you would ask. I believe 1:1 for the sour cream and mayo. I think add a little salt and garlic.
potatoes
hard-boiled egg (1 for every potato)
Vadalia onion
bacon
celery seed
salt, pepper
mayo
Dijonnaise mustard

any sweet onion will do. Texas sweets, Myan Sweets, Vadalia, ... Use the same amount of mustard and mayo. Enought to coat it.

Mayonaisse
Hard boiled Eggs
Sausage
Pickles (we used real Polish pickles)
dill
Celery
Mustard
Green garlic
I think we used a few pieces of dill and the green garlic.
Sorry, I don't know the exact measurements. But you could tell based on how much you need/how it looks.
