I'd second Red Bamboo and Vegetarian Paradise (or is it Heaven) is right by it--you might also check out Dojo by NYU and Gobo on 6th Ave (it's kinda chi-chi and hip)

This is the best!!!!!!!!!!!!!!!!!!!!!!!!!!!! They have such a cool menu. Go early, it's always packed. It is great for meat-eaters too.

I wish I could remember the name of...well, several places actually. There's a great veggie place on 14th st. between 2nd and 1st (I think). Also, there's a vegan bakery with some EXCELLENT cookies on 1st between 14th and 13th...and then there's Babycakes, a vegan, gluten-free, SUGAR-free bakery whose cupcakes actually won best cupcake of 2006 by New York Magazine (they use agave nectar instead of sugar).
