Let's say a co-worker is smacking gum at an annoying loud volume.
What can one say to stop them that won't come off as rude?
Anything you say will sound rude and offend them.
Ask them for a piece and smack along :0)

I did put a mint in my mouth and smacked a bit, but it only makes her smack louder...I think it is a losing battle.

Jump up behind her and the resulting startled choking should soon bring an end to the smacking. And the smacker...
tell them if they do NOT stop smacking like a 4-year old you will either make them wear it on their nose, or you will personally stick it IN their hair.

why worry about being rude....they aren't worrying about sounding like a cow chewing its cud?

why not approach the supervisor or manager, and advise him/her how much it is distracting you from focusing on your work. let him/her know that you don't want to make it a personal issue between you and your co-worker, however you would greatly appreciate it if they [supervisor or manager] would make it stop.
this is really the manager's problem to handle. a good manager will handle it without involving or identifying you.

if that doesn't work you can always start discreetly leaving wads of your own overly chewed gum on you co-worker's phone, or chair, or keyboard, until they get the message.
