Are actors more likely or less likely to come out the stage door and sign on opening night (as compared to what they usually do)?

I would say less. from my experience, opening night is usually when the stars find an alternate exit from the theatre. But it all depends on the show, the star, the theatre
Less. At least on/off Broadway, there's almost always an event afterwards, and there's all kind of pressure to change, get your makeup/hair done, and get there as fast as possible.
Even if you're not traveling en masse (like in a bus), your agent, etc, wants you there a.s.a.p. to work the room.
In this situation, the professional obligation to socialize and circulate among the money people and industry people will almost always outweigh the professional courtesy of signing at the stage door.
