Apart from fetching the lattes, what does a Assistant Director ACTUALLY do

Writes down blocking, makes prop lists, writes down notes from the director to be given to actors and crew, etc.

Totally depends on the director. I have seen assistant and associate directors that run production meetings, give actor notes, and conduct rehearsals. Most often an assistant will be ask to write down blocking, take and sometimes disseminate notes, attend to the directors personal needs, serve as eyes and ears for the director within the company, and most importantly, get coffee. Quite often, assistants also take on tasks that would usually fall to stage management like being on book and giving line notes.
