Concession Stands at Theatres

Hi everyone

I am working on a project for a college course that I'm taking where we have to run our own theatre company. One part of the project is to plan out the budget for one season. We are supposed to think of all parts of the theatre and try to figure out where to make money to keep the theatre in the black. As part of the budget I am trying to figure out how much money is spent buying the projects for concessions and how much money is made off of it. I have read through a couple dozen articles but haven't found anything that goes into the specifics of concessions. Does anyone know a good place to find any sort of information on this? I really appreciate the help!
