what about bye bye birdie? I know its cheesy but its really fun, uplifting, and has a big chorus.

Bye Bye Birdie was done at the Encores! starring Karen Ziemba not too long ago.

Sunday In The Park With George would be a great show to do.
I agree with Craig about Zorba and I'd also add West Side Story.

There was a concert of CAROUSEL at Carnegie Hall to commemorate the Richard Rodgers centennary. It featured quite a cast - Hugh Jackman, Audra McDonald, Norbert Leo Butz, Blythe Danner, etc...It is a pity that no recording ( audio or video) of the concert was made, as these strong voices were complemented by a full orchestral accompaniment and performed at such an iconic stage as Carnegie Hall.
