I don't think it's anything to do with Eva at all, moreso that OP was thinking about roles they'd love to see Nicolette tackle and Eurydice is one of them. It's totally possible to love whoever is currently doing a role and not want them to leave, while still imagining what it would look like if someone else did it (Or sang it in a concert, or in another production, or)
My quibble is Nicolette not a little too old to play Eurydice? I got the impression that she and Orpheus were supposed to be early 20s, to contrast Hades and Persephone. "When I was a young girl like you" requires there to be a contrast in their ages.

I definitely didn’t mean to imply that Eva won’t do the role justice. I know she’s a fantastic performer.
