I'm always on the lookout for pictures of hr as Penny but there don't seem to be many out there

Hopefully, her website will have some when it's up.

Yeah, it is. My dad took a picture of my sister and I infront of the picture they used to have hanging outside with Jennifer Gambatese. I used the part with her for my icon.
