I saw that IF/THEN extended on Ticketmaster and added a block of tickets out to Feb.7, but I've noticed that many identical seats across future dates are greyed out/unavailable. Why is that?
They never release the whole house, usually to hold back seats so there are premium tickets available closer to those dates, etc.

Ah, interesting. I remember reading somewhere about variable ticket pricing, but I never understood how that works. I guess timing is a big deal for the "premium" bits.
It's not just about dynamic pricing. Seats are also withheld from sale because they are on hold. There are contractual holds (creatives, producers, actors, etc.), press holds, and emergencies. These holds are eventually released for public sale within X hours of the performance date if they go unclaimed.

I know some of those side orchestra aisles seats toward the front are definitely house seats held for the cast/production

Also, I know for this show lottery and lottery-loser seats show up in the grey. I know in my case I got orchestra row C all the way on the right as a lottery loser ticket, but it's never for sale on the website. For good reason - it's very much partial view.

Thanks for the additional info. I knew about the front-row lotto but tend to forget about the lotto-loser option.
