The witch, the Castle Anthrax (with the beautiful young women) the three-headed knight, and the bridge of death.
And of course, the ending where the knigfhts are arrested for kiling the Historian.

They also took when Lancelot swings on the rope during "He's going to tell" and Scene 24.
On a side note, my freshmen science teacher loves the movie and I told him about SpamAlot and gave hime a review after I saw it and he was pretty bummed about the bridge of death not being in the show.

I can't believe that they took that out. That was one of my favorite lines in the movie. Also the scene in the Cave of Caaerbaanogg (sp?) and the Black Beast of AAAAARGHHH!!! and the Castle AAAAAAARGGGHHH!!! and Roger the Shrubber, the old crone, the part where all of the knights fight the Killer Rabbit (only Sir Bors gets to fight the Killer Rabbit), and also the part where Arthur says, "No, on second thought, let's not go to Camelot. It is a silly place."

Two reasons the Bridge of Death was cut:
1: The technical nightmare of flinging bodies off a brige into an abyss
2: Two of the knights would be killed - thereby ruining the ending of the musical. PLUS, if Azaria, Hyde-Pierce, Rosen or Seiber plays the Bridgekeeper, you are already short another knight.
The saddest thing about cutting the scene is that you lose this bit:
"What is the weight or an unladen swallow?" "An African or a European swallow?" "Err... I don't know that....AGHHHHHHH!!!"
It's always nice near the end of a show to refer to a joke from the beginning.
