I have tickets for a stall when I'm seeing an upcoming show in London. In general, what is the difference between a stall and a regular seat? Is a stall a better choice? It the view poor?

Basically, a stalls seat is the same as an orchestra seat. They just have different names.

Are you sure? I thought the stalls were the elevated private spaces on the side of the theatre...if those aren't stalls, what are they?

You could look at a seating chart of the show you're seeing and see that the stalls are, in fact, the UK's equal to the US's orchestra.

here in Australia we call the Orchestra seats Stalls as well.

In England and Australia, the "stalls" are the equivalent of the orchestra section here.

If you want to see how good/bad your seats are, take a look on www.theatremonkey.com - it'll show you the whole layout of the theatre with the various sections levels labelled (useful as Grand Circle, Upper Circle, Balcony, and Gods can all mean the same level in some places!)

Like Eastwickian said, Theatre Monkey is good for telling you about the view from all the theatres in London, or Ticketmaster/See have the basic plans on their websites.
