I'll be travelling to both Miami and Orlando for business over the nexy month. Is there anything worth seeing other than whatever's running these days at Disney?

I'm in the Tampa area so I can't really speak for Orlando but I do suggest you check out the following:

If you have time, have them send you that discount card. I've heard that it is really good.
I checked the site out and there is a part where you can put the exact dates your going to be in the area and you can check off what your interested in--theater being one of the things you can check off. It will tell you what is available during that time. It's a nice site with lots of good info.

I lived in Gainesville for 3 years. The heat probably will kill you. No kidding -- when I went there the first time, I nearly had heat stroke. (Insert drink lots of water lecture here).
Theatre in Gainesville itself is pretty awful. I saw a production of "Streetcar" there, and heard the stage manager coughing off stage. Not very professional. I hope Orlando is better, and I'm sure Miami is.

Yes, I agree that you will need lots and lots of water. Don’t try to be a superman if you start feeling it’s effects. Head for the nearest shade or AC. Heat stroke is not something you want to experience and is 100% preventable.
I can handle the heat much better than I can cold (wonder why?) but it doesn’t take a lot get my teeth chattering.
I have to say that Theater in Tampa is very good. The Tampa Bay Performing Arts Center is a state of the art facility. It has at least 3 different venues at different sizes. You can have many different shows going on at one time at different levels of professionalism.
If "Cats" is your thing. I believe it will be there sometime in July--if your still going to be in the area.
