Does anyone have a really good veg chili recipe? I know there are several vegetarians here on the board, so surely someone has a great tried-and-true recipe to share.

This is so simple it's embarrassing but it's a hit every time I make it- I found the recipe in some woman's magazine.

3-2-1 Vegetarian no fat chili

3 cans "chili ready" diced tomatoes
2 cans black beans, drained
1 can corn drained

Mix together and simmer a few minutes. You can dress it up as much as you'd like (Saute some onion & green pepper, use regular tomatoes and add your own secret chili spices, etc) but it's perfectly edible in this lowly form. And if you don't care about the fat & calories, make a cornbread mix and bust out the sour cream and it's positively delicious.

I don't have a recipe per se; I make it up as I go along.

But I like to stir in a few tablespoons of couscous at the last minute. It gives a wonderful texture (not unlike ground beef)that makes it more like chili and less like soup.

I've had meat-lovers swear they don't miss the beef!

Oooh, good suggestion with the couscous! That would add excellent texture.

Joe, I love that yours is ready to go any time! All you need are those six cans in the pantry!

I make it with Smart Crumbles! There are some great packets of chili seasoning that you can get in (sometimes the Mexican foods section of) grocery stores. I think this one is my favorite...

I usually follow the recipe on the package, adding tomatoes and beans. You can add as much or little cayenne pepper as you want. A little goes a loooooooong way. For a meaty texture, I add the Smart Crumbles. People never know the difference.

Just be careful how much you add. It can quickly "seize up," and look like concrete. Of course, if that happens you can always add some water, stock, or tomato sauce.

Here's my recipe: serves six to eight

INgredients:

2 TBSP vegetable oil
1 large onion, chopped
4 med. carrots, diced small
6 cloves garlic, minced
1 green pepper, chopped
1 red pepper, chopped
1 cup dried lentils, rinsed and sorted
4 teasp. chili powder
2 teasp. cumin
2 bay leaves
1/4 teasp. cayenne
2 cans crushed tomatoes
1 cup cooked black beans
1 cup cooked kidney beans

In large pot, heat oil one minute. Add onions, carrots,garlic, peppers and cook covered, until all veg. are tender.

Add lentils, chili powder, cumin, bay leaves,cayenne and tomatoes. Add water if too thick. cover and simmer ten minutes.

Add black beans and kidney beans. cover, simmer until lentils are tender. Add salt to taste.

Now, I"m not a vegetarian but I loved this chili!

Jane, your recipe is similiar to mine! I slice the onions and peppers rather then chop. You can add tofu.

haha, not a tofu fan either. But thank you all so much for your input!

I'm hosting a small, informal bachelorette party for a friend in a month. She had joked about a chili, cheese cube, and beer menu, but then she got back to me and said, "Actually, some really good chili and bear would be amazing! I'm so sick of finger sandwiches and butter mints!" So I'm giving her single life a fabulous sendoff with hearty food, plenty of beer, and a small but pleasantly bawdy crowd. I can't wait!
