Question: If one wants to put honey in iced tea instead of sugar, how does one disolve the honey? It seems that honey and cold drinks don't mix!

Posted: 5/21/06 at 1:59pmI think the best way is to add the honey in when it is hot, so it will dissolve, and then refrigerate it. long process, I know, but that may be the best way.

I think Pippin may be right. And then when you serve it, just give the bottle it's in a little shake to disperse the honey. Did that make any sense?

Posted: 5/21/06 at 3:35pmI would stir, not shake... but, yeah... try heating up just the honey, so that it becomes really liquidity, then add that to the beverage and mix.

Posted: 5/21/06 at 10:42pmEither dissolve the honey in a small quantity or warm/hot water and mix it in or heat up the honey. But do stir/shake before you serve if you're making a larger batch of this as the honey settles to the bottom.

Splenda is NASTY! It has an aftertaste resembling envelope glue.
If you MUST go for something besides real sugar/honey, go for Xylitol. It's derived from fruits and barks (namely raspberries and birch) and is frequently found in chewing gum.

Well, Sun tea is supposed to be really bad for you because the tea never gets to an actual hot temp and the bacteria is able to multiply at an alarming rate.
Honey would probably work best in Southern type sweet tea. In the south, iced tea is made by placing a small saucepan on the stove with maybe three to four cups of water in it. Once it comes to a boil, you drop in your preferred tea bags. Luzianne is the best tea for iced tea, but lipton works well, too. You can either let them boil for like 30 seconds and then remove the pot from the eye or you can turn the eye off as soon as you drop the bags and let it sit on the eye. You just keep an eye on the tea and when it gets to a very dark color, you remove the tea bags. There is a point to this, I swear. At this point you would pour the tea into a pitcher and then pour in however much sugar you like or in your case, honey and stir. Once the sugar or honey is disolved, you add enough cold water to make the color and taste the way you want it. That way, the sweetness is disolved and your tea is luke warm at it's warmest. You can just pour it directly over ice without it melting all of it right away.

Posted: 5/22/06 at 8:00pmThat's how we made it when I was growing up, but once we discovered the hot water from the tap was hot enough to melt the sugar, we just used that to steep the tea instead of using a saucepan. (What can I say? The heat and humidity of Georgia in August will make you downright lazy.)

Honey has antibacterial properties (the scholarly article aslo suggests that heating can take away this property, so perhaps worth it to take the time to stir and dissolve the honey at room temperature):
