I am often asked: Was she really that thin? How did she do it? What was her secret? Well, there was a secret: She starved during the war, yet continued to study ballet all the while. Her eating habits were simple and she ate a normal amount. She loved pasta at least once a day. Yet she didn’t combine it with protein. In those days we didn’t know about food combinations so she did it naturally. She would have pasta and a salad, and she would only help herself once.
As the years passed, she ate less and less meat, but she wasn’t a vegetarian. She didn’t eat veal for humane reasons, but she did eat a limited amount of beef, chicken and fish. She was a very good cook and also believed that the color combinations of the foods on your plate were very important. “It isn’t very interesting to eat a plate full of white, therefore it can’t be very good for you either.” That was the way she designed a healthy diet: with a little style and color coordination, we ended up with a portion from all the food groups.
