I stumbled on a twist that is the best Mac & Cheese ever- while you boil a pound of macaroni, dice or shred a pound (more if you're a glutton) of assorted cheeses- I like some cheddar, some creamy white cheese and some thing with a punch (Bleu or Parmesan). Drain your mac, and mix in the cheeses and about a pint of sour cream. Dump it all in a pan and toss on a little more cheese to make sure you get a crusty top. Bake at 250 till said top is crusty.

Posted: 6/15/09 at 12:48amI have a low cal version of mac which I will post later on tomorrow, and tastes like the real thing, but with Whole Grain elbows, lower fat cheeses, whole grain flour/skim milk roux, turkey bacon, etc.

I always add Gorgonzola to my cheddar for that extra bite!
4Tbs Flour
2 Tbs butter
2 cups whole milk
1 1/2 cups grated extra sharp cheddar and a 1/4 cup gorgonzola
I like to top it with baked bread crumbs and crumbled bacon!

OMG! My mommy makes mac and cheese just like that! It's been a while since I've had it, but it was the only reason I went to any function with my family. . .well that and to make them slightly uncomfortable with my homosexual innuendos, but mostly for the mac and cheese. I probably threw away the recipe when I became a vegan, but I might have it somewhere still. I'll look, if so I'll post it.
I make soy mac and cheese with rice macaroni all the time. I think its' awesome, but its pretty expensive to make. Plus genuine soy cheese is hard to find.

Posted: 6/15/09 at 1:47pmFor a nice Caribbean kick (a style we found was popular in the Bahamas), add a couple dashes of Louisiana hot sauce in the bottom of the pan before adding the mac & cheese and then bake. YUMMY!
