I find blue corn a little tougher, yes, but not sweeter, bluemoon. I also love crab, but no disrespect to Maryland, I like NY's blue crab just fine - so much so that I'm having the softshell I caught last night for breakfast.
No corn, though. Instead, fresh mozzarella with basil and tomato from the garden.

Corn fungus (or huitlacoche) is DELICIOUS! It sort of tastes like a cross between corn and a mushroom- which is pretty much what it is. The Rick Bayless restaurants do huitlacoche tacos and enchiladas and they are drool worthy.
Huitlacoche can't possibly be delicious if it has a mushroomy taste. Also it looks like a smoker's lung. D: It's easily the most frightening-looking thing Steve has ever eaten, and that includes his own prison-style hooch.
They market the corn fungus as Quorn frozen vegetarian patties. I tried one when they first hit the store shelves and thought it was pretty good but then there was a smack war between veggie burger marketeers and the Quorn folks ("That stuff is FUNGUS!!!!").
Anyhoo, a friend recently bought Quorn's Gruyere Chik'N Cutlet. Fried it lightly in a pan and it was scrump. Absolutely scrump. (Yes, I'm trying to make "scrump" happen.)
