Rhubarb anyone?

I just made a huge pot of stewed rhubarb. At a 1.49 a pound it was a good buy. Anyone else here as crazy about it as I am? Does anyone have any good recipes for it?

As a chorus member in many a musicals, all I can say is "Rhubarb, Roobarb, Roo-hoo-hoo-hoo-hoo-barb"

In Kansas the ladies would make strawberry/rhubarb pie. Also, rhubarb preserves. tasty!

My late mother always made strawberry/rhubarb pie. She used to grow both of them in her garden. I loved it.

I am diabetic so I can't use all that sugar. I sweeten it by putting in a packet or two of sugar free raspberry jello.

Use Splenda. Ever try the fat-free, sugar-free Jell-O Pudding? Take 2 small pkgs of f-f, s-f vanilla pudding, add a tub of Crystal lite, whisk-in 3 cups of skim milk. Fold-in 8 oz pkg of Cool-Whip sugar free. Let sit in frig for about 1/2 hour. Delicious! You can also put it in a reduced calorie graham cracker crust. It would make two of those. I take those pies (lemonade pie) to parties, so I can have something virtually sugar and fat free. Everybody loves them. Nobody even knows they're fat free and sugar free.

I had an Aunt who lived in Albany who made the BEST rhubarb pie...which she would tell you all the time. My cousin convinced her that I loved rhubarb and would make me like 3 of them everytime she was in and I had to eat them all. Needless to say, my cousin wore a couple of them.

My stepmother made the best Rhubarb preserves in the world. I loved them on toast in the morning. Unfortunately that is the only good thing the nasty woman ever contributed to my life.

Rhubarb pie is my absolute fav. And I like mine without strawberries, thank you very much. Nothing but straight up rhubarb with a big scoop of vanilla ice cream. Delicious!

No one makes better rhubarb pie than Kansas Menonnites or Amish. NO ONE. Those folks in Yoder and Hillsboro sure know their baking.
