Anyone have an easy, no bake, preferably lower fat and calorie recipe for a dessert, that you've actually made and is successful? Thanks.

I have a great no bake cheesecake recipe....I'll try to type it up late tonight or tomorrow.

So easy my 10 year old is making it for T-Day.

I don't have a chocolate one, but this one fits the no-bake, low-cal, and virtually zero fat, and everybody loves it.

2 regular (small) boxes of Jell-O sugar-free, no-fat vanilla pudding, 2 low-fat graham crusts, 3 cups of milk, 2 tubs of fat-free Cool Whip, 1 tub (or 2 of those new paper tubes) of Crystal-Lite lemonade powder.

Whisk pudding, lemonade and milk together til it thickens. Fold in 1 tub Cool Whip. Pour contents between the two crusts. Divide the second Cool Whip and spread lightly on top of both pies. Chill at least 15 minutes.

EDIT: The milk should be skim milk.

Here it is:

1 1/4 cups graham cracker crumbs (you could use chocolate graham crackers!)

1/2 cup sugar, divided

1/3 butter, melted

12oz cream cheese, softened

2t grated lemon peel

2t vanilla extract

2 cups whipped topping

1 20 ounce can cherry pie filling -- see note at bottom

In a mixing bowl, combine the graham cracker crumbs and 1/4 cup of sugar and the melted butter, mixing well. Firmly press the crumb mmixture into the bottom of 9x9x2 backing pan (or muffin tin). Place pan in refrigerator to chill while making the filling.

In a large bowl, combine the cream cheese, lemon peel, vanilla and the remaining sugar. Beat with an elecrric mixer until light and fluffy, about 2 minutes. Fold in the whipped topping, then spread the mixture onto the chilled crust.

Spread the cherriy pie filling over the cheese mixture. chill the cheesecakein the refrigerator until ready to serve.

NOTES: Obviously you can change the fruit to anything you want. We are making an apple cinnnamon cheesecake. We are using applie pie filling and cinnamon chips. (My son is still deciding whether to add the chips to the cheese mixture or to melt them and drizzle it on top of the apples. We have also made a chocolate strawberry cheesecake with fresh strawberries and chocolate sauce swirled throught the cheese mixture after putting it in the pan.
