Well, if I was trying to appeal only to a typical theater-going audience, and didn't have a "theme" or anything as a company and just wanted to do an eclectic variety of works each season:
Sweeney Todd (of course)
The Importance of Being Earnest OR Noises Off
Death of a Salesman
Some sort of family-friendly musical like Ragtime or something
The Goat OR The Pillowman (to give 'em something challenging)

Loaded question, lol. It would have to be either a regional theatre somewhere or off-off broadway. Too many business considerations on Broadway. I'd rather produce a successful small production somewhere than a big flop.

KISS OF THE SPIDER WOMAN- Kander/Ebb/McNally: starring Donna Murphy as Aurora and Robin DeJesus as Molina.

I would open with a big, flashy musical- a crowd pleaser that would bring people to my next few shows.
It would be:
LA CAGE AUX FOLLES
Next, I would go with something relatively inexpensive, but artistically challenging:
I AM MY OWN WIFE
I follow that with another musical, perhaps not as flashy, but still a crowd-pleaser:
URINETOWN
Next, I go with one of my favorite plays ever:

I finish with my favorite musical ever:
