I've heard that Rebecca Luker is quite consistent. According to Laura Benanti, Luker never missed except when scheduled for a vacation during "The Sound of Music". I also hear that Marin Mazzie is also really good with her attendance record.
In the past, Ethel Merman was almost never absent for a performance. She managed the entire 644 performance run of "Call Me Madam". As written in the cast recording liner notes, Tom Bosley never missed one of the 795 performances of "Fiorello!". I also saw somewhere that Henry Fonda was there for the entire run of "Mister Roberts" without missing a perf. (there were 1157 in that run).
