I'm a big fan of "Patti Class" and "Forbidden Assassins."
Forbidden Assassins and Sondheim's Blues are the top two... though the Lion King Segment, A Chorus Cat, and Mucus of the Night are high up there as well.

"What is the Ragtime segment like?"
It's a medley of songs, basically retelling the story in a way. It pokes fun at the fact that all the songs end in a long note.
