I was looking for tickets for Hamilton in May and noticed that in one week they're only doing six performances and in another only seven, instead of the usual eight. Does anyone know why this is (Tony voters?) or if more performances will be added to fill out those weeks?

I don't know the answer to your question, but general sometimes shows have fundraisers or special performances that are not open to the public.
