Do something besides see shows? I know this may be a foreign concept, but NYC has some great museums.
If you have your heart set on theatre, try Lincoln Center. You can visit the library, and there are tours of the area (the Met, Philharmonic, etc.)
Late night, you're not going to get much theatre. You can probably find some cabaret-style performances. Look into Joe's Pub, Laurie Beechman, etc. Or you can look into some off and off-off-Broadway.
Or just walk around NYC. There are great stores, restaurants, etc. There is life outside of the theatre district.
Also, get your hands on a Time Out NY magazine (or just look online.) They always have fun, random things.

Posted: 7/3/11 at 3:44pmYou could go down by Columbus Circle and go into the mall there, there also is the NBC Experience & Top of the Rock as someone just said. Rockefeller Plaza is great. I went to the American Girl Place by there recently when I had to kill time and it was nice.

^ Darn, I missed that a couple of weeks ago.
In all honesty, some of the best times I've had in the city was when I had my camera with me and took random walks. Well, I did kind of plan them out, but mostly just the area I wanted to check out, not specific location.
