I'm seeing Miss Saigon on Wednesday at 2pm. What times does it end? And how long is the stage door? I'm aiming at a 5-5:30 bus home

The show runs about 2 hours and 40 minutes, including one intermission. The stage door for the Broadway Theatre is on 53rd St., so when you exit the front doors onto Broadway, turn left and walk west on 53rd (the door is not very far down).
The time that it takes for performers to exit the theatre can vary significantly and some may not come out to greet the public at all, especially between matinee and evening shows. You will not be able to visit the stage door and then make a 5:00 p.m. bus. Even a 5:30 p.m. bus may not be possible.
I went to the Miss Saigon stage door after a Wednesday evening performance and was there for about 45-60 minutes. I got my Playbill signed by most of the cast, but the young lady playing Kim (the alternate) did not come out.

Approximately, yes - depending on whether it starts exactly on time.
The security gentleman who was working the stage door when I went was very nice and he even went in to check on whether a few performers were going to come out. Also, the two little kids who play Tam come out with their chaperone and they can barely see the top of the barricade, but they sign Playbills with big eyes and without saying a word - it's very cute.
I saw MISS SAIGON last week. The show started at 7pm and I just barely made my 10:00 bus. I had to dash out of the theater the second the curtain call ended and I was out of breath when I got on the bus, but I made it. If the show had started later, or intermission had run long, or my gate was further away, I would have missed it.
It's possible you could make a 5:00 bus. You should be able to count on making the 5:30, unless you stage door.
