I keep a frequently-updated list of upcoming non-Broadway shows that I want to keep an eye on (for this whole season). At this point it's pretty cursory, mostly based on the casts and creative teams. Here it is, in its present form, if you're interested:
Ripcord (MTC) - 9/29
Eclipsed (public) - 9/29 - 11/8
First Daughter Suite (public) - 10/6-11/15
Pirates of Penzance (city center) - 10/15-16
Annie Get Your Gun (city center) - 10/27
Invisible Thread (2nd Stage) - 10/31
Lazarus (NYTW) - Nov-Dec
Henry IV (st. Ann's) - 11/6-12/6
Dot (Vineyard) - WINTER
Mother Courage and her Children (CSC) - 12/9
The Last Hotel (st. Ann's) - 1/8-1/17
Pericles (theatre for a new audience) - 2/14 - 3/27
Nice Fish (st. Ann's Rylance) - 2/14 - 3/13
Nathan The Wise (CSC) - 3/18
1776 (encores!) - 3/30 - 4/3

Personally, I'm really looking forward to Barbecue, Eclipsed, and First Daughter Suite at The Public; Hir and Marjorie Prime at Playwrights Horizons; Dada Woof Papa Hot and Kill Floor at Lincoln Center; Mother Courage and Her Children at CSC; and Incident at Vichy and Night is a Room at Signature.
