I don't think it's possible to choose just one from each show.

I would make two lists: one "Best Clever or Tongue-Twisting Song in Each of Sondheim's Musicals" and the other "Song in Each of Sondheim's Musicals That Provides the Deepest Insight into the Human Condition--or at Least into My Life at This Particular Point."
