I'm going to be heading into NYC on Sunday with a friend hoping to grab a pair of tickets at TKTS. I noticed for tonight and tomorrow's matinees there's a limited choice. The usuals aren't there(Beetlejuice, Waitress, Jersey Boys[off-Bway]) and some of the other usuals are only 30% off(Chicago, Tootsie, Mean Girls). Is this weekend typically very busy? Am I better off trying various rush or SRO?

Given that 2019 has only 2 non-Christmas weekends post tree lighting, instead of 3, then a very huge answer of YES.

Yes, I attempted to see the “Come From Away” matinee yesterday and it was completely sold out- I was shocked since I thought it wasn’t selling well any more!

It was a last-minute thing since I happened to be in the neighborhood around noon but had somewhere to be at 4 so it was the only show I would have been able to see given the time constraints.
Come From Away is still selling out, just the demand isn't there anymore. They're always at over 100% capacity and still typically sell SRO for all performances.
In regards to my original post, got tickets to Rock of Ages off-Bway for $56.
I know it's a holiday weekend, but there's so little options at TKTS this weekend(Broadway) . Was going to go in tomorrow, but if the city is a zoo, I'll pass. Only noticed 4 shows available for tonight and tomorrow's matinee : Ain't Too Proud, Chicago, The Inheritance & Phantom.
