I always see posters up for shows that are "Junior". What does that mean?

It's a version of the show made for younger people to perform. Basically they cut out some of the show that may not be appropriate, or they just do it for time constraints.
I was in Dear Edwina Jr. and Honk Jr. They make the shows one act, cutting out alot of material, and make the songs in easier keys and time signatures. They also add a lot more parts.

I was in Into the Woods Jr. a number of years ago. In town they have also done Bugsy Malone Jr., Guys and Dolls Jr., Aladdin Jr., Annie Jr., and Fiddler in the Roof Jr.
The funny thing they do they well know junior verisons of shows for the summer school show, but do crappy unknown show for our high school musical (same directors for both).
