Is it a curtain that flies in and out?
Thanks for your help.
You mean a knife pleat? That's the only term that this sounds like. A knife pleat is a single pleat turned back in on itself. So a knife pleated curtain would appear to have a great number of inward turned and narrow layers.

Can you give us context, OP? Off-hand, I've never heard the phrase. I know that a fire curtain always has a knife next to it so that in the event of an emergency, the line can be cut, and its weight will cause that asbestos curtain to fall on its own.

Maybe you're thinking of a "guillotine curtain" which is indeed a curtain that flies up and comes in vertically as opposed to a "traveler" which closes on a track horizontally. A guillotine is sort of a knife after all.

Roadmixer is probably right. Is it possible that you mis-heard? A guillotine curtain (also known as a "bounce") comes straight down like its namessake, but I've never heard it referred to as a knife.
