What role did Barrett play in the WAITRESS workshop?

I know that the wonderful Barrett Wilbert Weed was in the original 2014 workshop of WAITRESS. I have seen the show and was struggling to figure out what role she would have played. It seems that the only role she possibly could have played is Dawn, but I found that somewhat surprising based on my knowledge of her as a performer. Does anybody have any insight?
