Understudy is in the show(usually ensemble) and understudies one, possible more roles.
Stand-by is usually NOT in the show (Im sure sometimes they have been) but literally stands by the theatre and will go on should the actor whos role they cover calls in. They need to be in a certain radius of the theatre for every show.
Swing is usually not in the show but knows every single male track (if they are male) and female track (if they are female). I have a friend who's male swing for Lion King and he even knows all the female tracks, lol. You NEVER know when you'll be needed.
