I heard that Whoopi doesn't do every performance. Is this true and if so when does she not go on?

To answer your question lottery, I believe she's doing all performances. I know in her first week she missed the Wed. Mat because of "The View" and that may be the case in her last week, but other than that, I haven't heard of her planning on missing any performances.
