"Sun and Moon" from Miss Saigon. Quite easy to sing. Just need a Mezzo-Soprano for the lady and a Baritone or Baritone/Tenor for the gentleman. The melody is quite beatiful.

I recently sang "Serious" from Legally Blonde with one of the guys in my show choir for a talent show. It was a huge hit! It's pretty easy.

Oh cool! You're definetely right about As Long As You're Mine, it's a little intimidating to listen to at first but I found it easier than I though it would be to sing.
