Annette O'Toole apparently sings fairly well and doesn't showcase it.
And, while she probably has a lot of opportunities to sing (and does so), most people don't seem to know that Catherine O'Hara is quite a decent singer.
Annette O'Toole did her own singing in that Tammy Wynette tv-movie she did years ago (and did a great job!).
Sissy Spacek actually had a country album out a few years after she did "Coal Miner's Daughter."

Ohh, Kanga, I was just getting ready to say Megan Mullally!
Mullally has sung on Broadway, at the Kennedy Center and at Jazz at Lincoln Center. I wouldn't put her in this group, nor Eric McCormack, who has sung on Broadway, nor Sean Hayes, who sings on TV.
John Schneider has sung on Broadway too. So has Tom Wopat. I was going to name Cheryl Ladd but I remembered she replaced Bernadette Peters in "Annie Get Your Gun".
Yes, Rath, but (reg. Will and Grace cast) the majority of those who know their names don't know that - they're not known for their singing.
True, they've been on broadway, but to most people that's not their main claim to fame.
Broadway is a hell of a showcase, though.
True but the question says: What actors do you know of who have some degree of singing talent that aren't necessarily known for their singing /or/ who haven't had much of a chance to showcase it?
So some people could match one part of the question and some the other, or both.

shut up, Jessica Biel can sing?
She has a good bluesy voice. She sang on an episode of 7th Heaven (not the musical one, since she was gone before then).
Oh. Apparently Sarah Michelle Gellar can sing. (Buffy musical)
And Cameron Diaz, if she counts.
Katie Holmes sang an admirable version of "On My Own" on dawson's creek.
Katie Holmes makes me feel good about my voice.
Haha.
Another: Kristen Bell.
Admirable... more painful in my opinion.
Why does Kristen Bell sound so familiar? Hang on.
ETA: Got it. She was in Veronica Mars.
