How about swordfish? I like it fine. But my seafood purveyor, when he goes out to dinner, won't eat it. He's seen too many of those 3ft-long parasitic worms that riddle the fish's flesh.

Great article....the fish recipe at the bottom made my mouth water a little.

Amberjack is even worse. We cut one open in the test kitchen once and I had to run out and throw up. It's disgusting.

Do you guys think this is the same for here in the US? I ask because the article is from a British news source. I believe the thing about well done steak, but the fish, THAT's sketchy.

Having worked for a few years in a great seafood restaurant I can attest that he is right about swordfish and Mondays. In fact, dont even dine out on Mondays...and Sunday brunch might as well be called "leftovers".

There was a re-run of an interview with him recently where he talked about the book and gave some of the tips including not ordering the fish on Mondays.

Bourdain's about as NYC as you get. Born NYC, raised NJ, Vassar, Culinary Inst of America, then cook/chef in NYC.

In spite of Brit tag on article, yep, it's based on American experiences.
