Force liquids, and all the vitamin C you can handle!

I've got a treasure trove of young and/or miniature veggies - brussel sprouts, squash, zucchini, beans, artichoke hearts, mushrooms, cherry tomatoes, broccoli, cauliflower, carrots, peart onions - and they'll all get tossed in some olive oil, salt/pepper, and herbs, and then roasted until they're just on this side of tender. And then I'll feast on them for the next few days!

Don't need any help, as I cheated and got them basically prepped to begin with! Just a little trimming and chopping, and I'm all done
