OK... Here's a super easy no-bake, low fat, low sugar, 10 min. prep. time goodie that has a surprisingly rich taste.

Chocolate Coffee Mousse

Ingredients:
2 boxes sugar free jello chocolate pudding
1 container of Chocolate Cool Whip (you can sub. fat free, sugar free cool whip and make it totally healthy)
1-2 tablespoons of gourmet flavored coffee (finely ground only)
Toppings (choice of fresh cherries, crumbled oreos, etc)

Directions:
prepare pudding as directed
fold in cool whip
fold in ground coffee
cover- chill 3-4 hrs. or overnight in refrig.
Serve in dessert cups- top them and ENJOY! Serves 6-8 people or 2 chocoholics!

Do you use real ground coffee or powdered instant coffee?

The idea of chewing coffee grounds and swallowing them is a bit icky.

Hrrm...I remember making a half decent cheesecake once by improvising a recipe from the box of philedelphia carton.

I once made a good lime zest shortbread, but I lost the recipe. It was a Martha recipe pre-jail!

I bought a small bottle of real key lime juice ($2.49) at Fairways grocery that you can use to make a key lime pie...

Graham cracker crumb pie shell or what?

I have to get the rest of the recipe.

Meyer limes are yummy, too.

In Hawaii we have these big sweet, tangy Tahitian limes that I love with pink flesh.

Sometimes the really good-tasting Meyer limes in the bags you can get at the market have pink flesh and those are the yummiest.

In Southern France in Grasse and Nice they scent the bread with orange water so it smells like oranges but has no orange taste.

I had always thought that, but a friend of mine concocted a steak rub out of espresso-ground coffee and other seasonings that was truly incredible. If you grind the coffee fine enough, it's no more intrusive than any other seasoning.

my cookies are to die for...........and I just realized that that could be taken many ways........and I STILL stand by that statement, heh heh

I have this recipie that calls for lemon rind and lemon juice, and the first time I made them I didn't have any BUT....I had a grapefruit, and by God they are the best damn cookies!

nom~ I use Gevalia brand "creme brule" which has a carmel flare.
If you stick with gourmet brands they are finely ground....or you can always pulverize anything grainy into powder with a processor. (I beat the hell out of Splenda into powdered sugar for sugar free dishes).
